The Garden: First Harvestings

Eliza has been working nearly non-stop on our garden over the past few weeks and it is coming along beautifully.  I feel guilty because I haven’t been able to do nearly as much as she has (due to my work schedule) though this past weekend I helped with a few little projects.  All and all the backyard is looking more and more like a productive garden plot every day.

A really exciting aspect of our garden is that most of our spring greens are now at harvesting size, which means we’ve had a steady supply of lettuces, mustard greens, bok choys, arugula, chard, etc. These are all ideal vegetable for delicious and hearty salads, of which we’ve consumed several over the past couple of days.  Furthermore, with things like beets, carrots, turnips, radishes, and strawberries all in the ground, we’re looking forward to additional fruits and vegetables within the next month or so.

It has been a lot of work so far (again, mostly taken on by Eliza, working like a champ) but the upside is that a lot of this will not have to be done again.  The beds will stay the same for as long as we stay at the house and hopefully we will not have to be remaking any trellises for a long time.  Sure we have to fertilize and re-mulch every year, but that is a small cost for maintaining a large healthy garden.
